We chose 4 different colors of fresh Bell Peppers and pre-baked them before stuffing.
After the peppers baked at 400 degrees for about ten minutes, we stuffed them with these layers...
A layer of rice and garlic tomato sauce
A layer of ground turkey spiced with oregano, salt, and pepper.
A layer of grilled veggies- mushrooms, diced tomatoes, onion, and chopped green and red pepper (in case we weren't going to get enough from the whole peppers themselves...)
And we topped them off with spinach and goat cheese.
There were no leftovers...
Next time we're thinking Stuffed Peppers with Ground Lamb, Feta Cheese, and Arugula.
Another Idea- One of my favorite vegetables is Acorn Squash, and it is really easy to cook. They can either be baked, or popped in the microwave for 4-5 minutes and eaten plain- they are that sweet.
You just cut it in half, scoop out the seeds, and you could also make it a dish by stuffing it with your favorites.
