Breakfast for Breakfast
I bought this giant Latte mug at Tj Maxx for $3.99 and I haven't used another mug since.
Breakfast of Champions:
2 slices of Great Harvest C-Ville Crunch bread
2 tablespoons of Trader Joe's Raw Creamy Almond butter
One smashed Banana
2 tablespoons of Nutella.
WIN!.
Chicken Fajita Pizza with Mango Guac Dip
Our last pizza night before break... We decided to go with our favorite: Chicken Fajita
One container of the Crossroads special: Black Bean Corn Salsa. It's definitely got a kick to it, but it's surprisingly really good salsa. They put carrots in it too which is odd, but inexplicably key to its appeal.
The crust was stuffed with cheddar, we sauteed some peppers and onions:
And then the chicken and cheddar were put over the top.
Pumpkin Chili
FINISHED WITH EXAMS!!!!
Because I have been studying and unable to post, I have a lot to catch up on. Last week we made Pumpkin Chili with Trader Joe's Cornbread.
The Chili had:
1 can of pumpkin
Sauteed Peppers and onions
1 container of Black bean and Corn salsa (found at Crossroads and bought with fake money :)
Chili Powder
Garlic powder.
Unfortunately the pumpkin makes it SEEM less appealing, but it was delicious I swear!

And so it continues
This is it... the end of my dough supply. Tomorrow we are making Pumpkin Chili in homemade bread bowls...
I put out the toppings on the plate while I pre-baked the dough
I decided to spread the goat cheese on first this time to make it a "white" pizza.
I added a bed of spinach leaves
Some red onion and whole mushrooms,
Some red pepper and cherry tomatoes,
And finally some chopped asparagus and cut up chicken with cilantro
Eating Process...
The goat cheese was melty and delicious as usual, and I preferred it spread on the bottom instead of crumbling it on top.
On a side note, today I FINALLY made it to Blue Grass Grill and Bakery downtown. I have been dying to go there for a long time because I had heard that their biscuits were good.
I ended up getting a mushroom omelet with feta, a warm biscuit, and deliciously creamy cheese grits.
It was all I had hoped and more.

I lied
I lied... it was not the end of the personal pizza marathon. My mom came to visit me this weekend and among other Trader Joe's goodies, she brought another dough.
I didn't want it to go bad, so I cut it in half and decided to go Seafood tonight.
Base layer: Crushed Garlic, Mushroom tomato sauce
Trader Joe's Seafood Medley (shrimp, calamari rings, scallops)
Roasted Red Peppers,
and Crumbled Goat cheese on top.
If I had had fresh spinach leaves I would have added them for aesthetics.
Per usual, I took too many pictures...
Miles was staring at me because he wanted to play
But eventually he gave up as I busied around the kitchen and found his bone.
You would think I would be getting sick of pizza by now- but for some reason...

Exam Pizza
Okay, so by "Last night of the pizza marathon", I meant the personal pizza marathon- Tonight, it was the three of us again, and we decided we were in need of a pre-exam pizza.
The basis was to each name our favorite toppings and put them together.
It became: Spinach and Goat Cheese stuffed crust, topped with green peppers, onions, mushrooms, sun dried tomatoes, canadian bacon, and cornbread.
First, we made Trader Joe's Cornbread to crumble on top...
We had fresh sun dried tomatoes...
Green Peppers, Onions and Mushrooms were sauteed with Canadian bacon...
And the crust was stuffed with Spinach and Goat cheese...
