Barbecue Pulled Pork Pizza

Tonight , I did not feel like going to the dining hall and I still had a Garlic and Herb Pizza Crust left. Sooo I decided to see what I could find that could be used as pizza toppings... In my to-go box I found fresh spinach, broccoli, barbecue pulled pork, and cherry tomatoes.

I spread the garlic aioli on the bottom again, a light layer of barbecue sauce, and some diced tomatoes with garlic, oregano, and olive oil. The the spinach leaves, the pulled pork, the cherry tomatoes, the broccoli, and once again- topped with pecorino cheese.

I was so anxious to eat it that I forgot to take a picture... so you will have to use your imagination. The pork  was perfect because I have gotten sick of chicken on everything. It was delicious!

Homemade Personal Pizza using Trader Joe's Ingredients

When I went home this weekend I was able to get some Trader Joe's goodies, so I put them to use tonight. I used part of their Garlic and Herb dough. 
First, I spread on some Roasted Garlic Aioli (It comes in a small jar). 
I then put some Diced Tomatoes with basil, garlic, and oregano for the sauce. 
I sliced Pecorino-Romano cheese thinly and layered it,  (Keeping some to grate over the top). 
I then put Trader Joe's Canadian Bacon over the cheese...
Crisscrossed some asparagus and artichoke hearts...

Wisdom Teeth Thanksgiving

I have no one to blame for this decision but myself... I just finished my last Cross Country season, and so before the beginning of Indoor Track, I had to get my wisdom teeth out...the day.before.Thanksgiving. 

I actually don't remember much of what happened on Wednesday or yesterday (Thanksgiving) because of all the painkillers I was on. I did somehow manage to take pictures of everything before returning to my deep slumber.
The turkey was less impressive looking than the team Thanksgiving, but it was a pre-stuffed Trader Joe's Turkey that we get every year, and it is my absolute favorite. 
 Since my family is full of red-meat lovers, they decided to make two legs of lamb in case the turkey wasn't filling enough.

And finally, I had experimented again with dessert bars:
Banana Nut Nutella Swirl Cookie Bars

The bottom layer was made of 4 bananas, 1 cup of brown sugar, 1/2 cup of Nutella, and 1/2 cup of walnuts
And the top was a layer of chocolate chip cookie. 

Luckily, Mom saved me some of everything and I was able to eat it today. Everything was as delicious as always,-EVEN chopped up in the blender. 

Team Thanksgiving


Every year the girls team puts together a potluck Thanksgiving dinner before the NCAA Cross Country Race. I don't have the recipes, but I enjoyed taking pictures of the various dishes...

Quinoa Stuffed Acorn Squash

Base:
Trader Joe's Quinoa.

Roasted Garlic, Peppers, Asparagus, Chickpeas, Pine nuts.


 Topped with Goat Cheese....

Italian Sandwich

When I went to Rome this summer with my Mom, we had discovered our favorite sandwich to order. It involved Proscuitto, Pecorino-Romano Cheese, and seasoned Sun-dried tomatoes. When my mom came to visit me last week she brought me some Pecorino cheese she had found at- none other than Trader Joe's, and I have been making the sandwich all week. And im still not tired of it...

Breakfast for Dinner

Sometimes... when you're piling several delicious foods onto a pizza... they bake together to create something so very tasty. However, as the foods bake into each other, it also makes it more difficult to capture the picture in an appetizing manner. And yet.. I still try.

Breakfast pizza: Trader Joe's Garlic and Herb Pizza dough topped with : Roasted Peppers, Onion, spinach, mushrooms, and egg-whites, topped with Feta Cheese.



I had made a sweet biscuit dough in my bread-maker for dessert pizzas using cinnamon and brown sugar along with the whole wheat flour. We topped them with individual alterations of: Marshmellow Fluff, Nutella, Peanut Butter, Butterscotch and Chocolate Chips, Pumpkin Butter, Greek Yogurt, and Granola. 
My favorites were:
Greek Yogurt, butterscotch chips, and granola
Nutella and Peanut Butter
Marshmellow fluff and nutella
Pumpkin Butter and Butterscotch chips.
